Asosatus is a group of 80 coffee-growing families passionate about distinctive and innovative coffees. They seek to highlight the best of each variety through purist processes. Caturrón is a mutation of Caturra, known for its large cherries and a complex flavor with sweet herbal notes, a creamy body, and hints of milk chocolate. The process includes harvesting ripe cherries, a 50-hour anaerobic fermentation with Caturra must, and drying in patios and a mechanical silo. The coffee has a 95% yield above 15 mesh, with 11% moisture content and a water activity of 0.61.
