Notes:

Our new Thai coffee this year comes from RotatorCuff Coffee Farm located at Huai Nam Kuen in Chiang Rai. RotatorCuff has so much potential for producing exceptional coffee. The new crop 2025 is approaching, but we decided to bring a washed process coffee produced last year which the quality still high and delicious! 

This coffee was produced through anaerobic dry fermentation of the cherry for 12 hours, mucilage for 24 hours, and drying on a raised bed for 15 days covered by plastic shade. It tastes like white-tea, lemon, and lime, precisely like the stuff she grows on the farm, which includes not only coffee, but also tea and lemon. We roast this coffee lightly for expressive flavor and floral character, as well as a highly clean sweet similar to our favorite washed coffee from Ethiopia.
