Processing: Hand-picked at peak ripeness. Floated to further remove defects and de-pulped on the day of harvest. Dry fermented for 30 hours. Dried on raised beds.

José Martinez consistently produces some of our favorite Pink Bourbon, and this harvest is no different. The cup is fruit-forward, with sparkling acidity and notes of pink grapefruit, mango, and berries.
